Hello!
I'm recently given vinegar my first try, and am already in the "never going back to store bought" camp.
I made the pineapple vinegar in Wild Fermentation, and have a nice vinegar in less than two weeks. My question is this: if one is supposed to stir/agitate it daily, how would the mother form on top? I do see the barest of films on top sometimes, and I'm just stirring it back in.
Is that okay?
Once the vinegar is "done" how do you store it? At this point, I don't have an interest in keeping "my mother" alive (Sorry, mom!) I just want to enjoy this nice little test batch of vinegar because it is delicious. I had so little trouble getting it started, I'm not sure I have a need for a mother to start new batches, anyway. Is there another reason I'd want to maintain it?
