Would 2 liter pop/soda bottles work well for hard apple cider? Fermented soda?

Yes, those would be fine. Consider smaller bottles as well, as you might want to preserve the carbonation when you only wish to pour out a drink or two. Use larger the larger bottles when you plan to serve to more people.

I ferment cider and soda both in heavy glass bail-top bottles. When fermenting sodas, I'll also have a single plastic pop-bottle so that I can feel the pressure accumulate by squeezing the plastic bottle, helping me determine when to refrigerate them. But agree that there's no reason the 2l bottles you're asking about wouldn't work.
