Yogurt help. Matsoni, viili, etc...

I tried making matsoni and viili from cultures for health and the matsoni became like a jello looking globe in the center of jar and milky along the edges i put in fridge for 6hrs than ate some its very mild tasting i poured it in the bowl and it came out in lumps thebsize of quarters and broke apart into smsller lumps and liquid. Is it supposed to break apart like this, its not really what i would consider yogurt. Also i want to try making ropey viili but the stuff from CfH isnt ropey. Any clue where I could get the ropey stuff? What type of yogurt is there that would be similar to seven stars or other organic no additive yogurts yogurt but mesophilic.

You should try Caspian Sea Yogurt. It has a ropey texture similar to viili but very mild taste. If you like tart it may not be for you though. I've been making it for about 5 years now and just LOVE it :)
