Fermented Salsa - Has anyone ever made this?

Hello everyone,

I make at least 60 quarts of canned salsa every year. The stuff just disappears. Every time we have company we open a jar of salsa and a bottle of homemade wine.

We eat a lot of fresh salsa too, BUT the thought just occurred to me, can you make fermented salsa?

Yes.

Type 'salsa' into the search bar for this board and you'll get a bunch of hits. It isn't my most favorite ferment ever (or maybe I just haven't gotten it right yet) but I do stir fermented chile paste into salsa fresca when I make that.
