Ginger bug / ginger ale troubleshooting

In Wild Fermentations page 139 and 140. How to make a ginger bug and ginger beer . I refer to it as ginger brew. Is there a place where he discusses ginger ale ? Anyway on page 140 he discusses snap top bottles . I use the liter size ones.
Also water kefir is different than dairy kefir.

I'm so happy I found this place, you seem like a good bunch of people I can learn from. My main problem is lack of patience. My Russian girlfriend told me a good old Russian proverb : " Nine women cannot produce a child in one month". It takes as long as it takes. Thanks for taking the time to post that link Christopher, I am off to have a gander, as we say in the UK.

Do you remember if you stuck with the cayenne and pepper etc? Would you use them now?

Yes, absolutely. I also mail-ordered a bottle of grains of paradise so I could do it more completely.
