Help, old ginger

When I bottled my JUN today I used ginger slices and apples to flavor it. The ginger root did have a piece with mold, but I cut off from the other end that was mold free. I washed and sliced the ginger. I noticed that the flesh was a little dark, but it smelled fine. I just found my fresh ginger in my refrigerator and realize the one I used was probably pretty old. Do I need to toss all the JUN, or should it be okay?

I'm just guessing, of course, but I bet it'll be fine. In any case, tossing it won't teach you anything and keeping it around as a test, will.
