I don't know if this is healthy, but there were several "holes" in my piece of ginger, inside which were small balls of very hard but crumbly brown powder which on sniffing, turned out to be ginger. I don't know how it formed but I added this crumbly dark stuff to my bug, and this one is foaming and bubbling much quicker than my other one which has none of the brown crumbly stuff in. I guessed it might contain more bacteria, and because it smelled just like good ginger and not " off", i added it, with the sneaky feeling I was doing the right thing. My bug has a lovely dark caramel colour now, and is bubbling away. Unless someone who knows more about ginger comes along and tells me this brown crumbly stuff is not healthy, I will continue doing like this, and see how it turns out.
