hey,
has any one tried doing a strait up yerba mate tea for their kombucha?
i was told that mate has no caffeine, but a chemical called mateine.
a quick wikipedia read has told me that "mateine" is just a synonym for caffeine...
so i guess it should work. just wondering if any one has tried it yet.

thanks!

yo fellows.

just pulled out my experiment. yerba mate mint and raw cacao powder kombucha. i guess it aint a precise test to see if it can live on only mate. but more of an experiment with non tea base caffeine and theobromine.
and OMGoodness!! so so good! a lot more fizzy than normal and remarkable aromas and overtone flavors of cacao, with minty groundingness to end the experience with a big round of applause.
next batch is going to be only mate so ill keep you posted.

untill then.
fermentaway!!
