Hi, I'm a returning user - haven't been here in a while, but I am starting to experiment with koji on meat and hoping to find some people with experience with that.
Otherwise I make miso, beer, and various vegetable ferments regularly, and sometimes tempeh, bread-y things, and nut cheese. Starting some dairy fermenting too.
Anyway, hello, and looking forward to having access to post on other forums again soon.
