Fermented Sweet and Spicy Thai Wing Recipe?

Hi,

Is it possible to make a fermented Sweet and Spicy wing sauce without any cooking/heating involved?

I guess, what can I add to the pepper mash, or after the mash (in the blender) to make it sweet?

You may have to backsweeten after fermentation for best results!
