Newbie to Fermentation

Postby honeybadgergrrl on Tue May 12, 2020 4:33 pm

Hi all! I am new to fermentation, but I have been cooking for a long time. I'm excited to learn from everyone here!

Maybe stupid question - so, when you weigh down your ferment with a cabbage leaf, does the cabbage leaf also have to be covered by liquid?

Welcome to Wild Fermentation.

Yeah, it's best if everything is under brine.

Thanks! I thought so, so I added a little water (not much) to top it off.

Also, I did a batch of what I am hoping will end up being half sour pickles. I had to use dried dill because my garden dill died and there wasn't any at the store. The dried dill has floated to the top. Will this be a problem? I don't see how I can keep tiny bits of dried dill submerged.

Wrap it in a little square of cheese cloth or even just cotton fabric, tied shut.
