I'm newly into fermentation, somewhat because we're doing some significant gardening now, and I've been harvesting over a 1kg a day of Asian cucumbers. So a way to preserve them is in order! Oh, and I love pickles.

First batch of salt-fermented pickles finished a few days ago, and I've been enjoying them (and even the bit of fizziness some of them have!)
