Hi,

I used to be a lab technician in food analysis detecting mycotoxins. Thanks to my wife, a gardener, I discovered the beneficial use of mushrooms.
First inoculating trees to grow Pleurotus ostreatus or Lentinula edodes
Later producing kombucha (which we taught to grow next to black tea also on green tea and rooibos) it followed sour-dough to make bread and pizza. Not long after, we discovered and fall in love with kimchi.
The newest trend in our home is tempeh, which landed on our plate last weekend.
Looking forward to gain more knowledge in this forum.
