I'm a new user, wanted to say hi to the group chat. I'm doing long fermented Red Miso pastes, Gochujang and looking to ferment Douban Jiang.

I welcome anyone's experience, especially which strain of Aspergillus oryzae koji used in Dou Ban Jiang.
