Hello. I started a batch of hard cider five or so days ago with a gallon glass jug of organic apple juice. I put unwashed organic apple peels I to it to give it some yeast. I poured out a cup of juice thinking that giving a little room for yeast activity on the top would be good. I saw no activity for four days and yesterday, based on someone 'a recommendation I stirred the juice up well and put a coffee filter back on with rubber bands. Today I woke up and there was a white, waxy looking film across the top of the juice. I tasted it and it just tasted a little less sweet. What is this film? It breaks apart easily and some has accumulated on the side of the glass jug near where the juice meets the air. Thanks for your help! I'll add pics when I get home.
