I stumbled upon an interesting open access ethnobotany paper:
Ethnobotany of wild plants used for starting fermented beverages in Shui communities of southwest China
It details the traditional use of a wide variety of wild harvested plants as starters for alcoholic fermentation in rural southern china. Some of the species used have close relatives in europe and north america.
I figured someone would find this an interesting read :)
