I would like to try my hand at making miso. Don't care for soybeans, so I'm thinking of trying Navy Pea Beans. Anyone with experience with a legume besides soy beans? Thanks to all.
I've only done miso from soy, but some folks here talk about some other beans here: viewtopic.php?f=4&t=3245&p=10152 (in case you haven't seen that already).
