Left sporulated tempeh in the dehydrator too long

Postby Pendecardiel on Mon May 21, 2018 10:30 am

I wanted to make my own tempeh spore so I wouldn't have to keep buying more starter. I let one bag of tempeh sporulate and tried to dehydrate it, but accidentally left it in the dehydrator with the dehydrator running for over a week. Does this kill the spore? Should I just throw it out and try again next batch? Or do you think it is still viable?

I'm not sure. I've been cautious of growing my own starter because of the risk of contamination of salmonella and other fungus. Instead, I buy a large quantity of the Raprima brand of tempeh starter, and have it shipped from Indonesia. It ends up being about $30 for 500g of starter, which is enough for over a hundred batches of tempeh.
