Green split pea tempeh

Wonder if anyone can help, I've been making tempeh for a while now with soy beans and now want to try with green split peas. Can anyone please give me some instructions, I'm assuming the timings & water measurements will be different to soy tempeh, many thanks in advance

I use yellow split peas. Soak them 4h than steam 20 min

I use room temperature water for yellow, you should experiment as green might be different .

I've made split green pea tempeh. I posted about this before: https://www.wildfermentationforum.com/viewtopic.php?f=4&t=21180

  1. rinse the split peas
  2. soak for at least 8 hours
  3. steam for 15 minutes
    • start timing once the steam is rising through the beans
    • careful of having the beans too thick or the ones on the bottom will be mush while the ones on the top will be raw
  4. toss with distilled vinegar (2 tsp per cup of dry beans)
  5. dry with a hair dryer
  6. add starter when 90F (1/2 tsp per cup of dry beans)
  7. pack into perforated bags & flatten
  8. incubate at 86F for 36 hours

This tempeh makes a great addition to a veggie stew or fried and smothered with gravy.

Thanks for info. How long would you boil/simmer for instead of steaming as I don't have a steamer big enough for the amount I want to make? x

maybe boil for 5 minutes than air fry them in a skillet for 10, or just steam in 2-3 batches
