I got to a same point when I wanted to drop the plastic bags.

Quite a frustrating experience when everything was so perfect with the bags

Well, I got a herb drying rack (a frame with legs and net) and wrap them up in consecutive attempts in baking paper, cheese cloths, aluminium and kitchen towels plus moved them up and down in the incubator (old fridge with lightbulb in it).

It never came up as nice as from plastic bags...

the closest I got was a layer of baking paper, and two layers of kitchen towels that I got wet every 4-8 hours to keep the moisture in.

Tempeh was nice, but it did not smell as nice, middle was sometimes undone, and the appearance was sub-par. plus the tempeh eats through the paper and towels too...

well I am not going back to plastic. Next one I try will be a glass tray with some wet towels on the top, we will see how it will turn out. (wife said no to aluminium covers...)

What is your soak/boil times for beans and do you dry them after?

just paper on top , soak time ~12 h , boil 45 minutes -these were whole yellow peas( marrowfat ),adjust depending on the legumes. Also 15 minutes steamed red lentils in there. No need to dry but I mix the spores with 2-3 tbs cooled lightly roasted rice flour

Works like a charm! Just wet kitchen towel on the top.

This is very helpful, thank you. Did you wet the towel every few hours or is that not necessary?

I kept it quite moist all the time - soaked the towel wet around 3-4 times a day sometimes more if it feels too dry. You can also see it on the beans - if they too dry I sprayed them with a little bit of water and later when solid I just flipped the whole thing in the container so the top side gets the moisture at the bottom... see how it goes.

Thank you terji, this is encouraging. I was considering to spray a bit of water but afraid to spoil another batch. I will give this a try.
