I recently made a block of tempeh using whole yellow peas. The end product turned out nice and firm with a quite pleasant aroma, however, I noticed that after only about 30 hours several dark patches started to appear on the block. The tempeh still tastes great and is quite firm however its not a very pleasant sight. Could this be due to too much moisture or something else?
