Delicious Fermented “Tater Tarts”

I found this recipe while clicking around, looking for veggie fermentation ideas and tried it out.

I fermented the potatoes for 5 days and then baked them according to the recipe for 45 minutes. The potatoes have a really unique flavor that is quite good and are light and very crispy. Yummm!

I like to use my leftover, ripe, old kimchi brine for that purpose. The fries are so good!

Sounds great Christopher!

I wish I could make kimchi again, but the last time (also the first time) my wife could not tolerate the odor even of a sealed jar in the fridge so I decided to restrict myself to ferments without garlic or onion.
