Soft Pickles

Postby SolusUmbra on Sat Feb 03, 2018 10:10 am

I have tried my first batch of pickles and they turned out soft, no crunch at all. I had dill, garlic and a bay leaf in the jar. I also had my pickles cut in small circles, if that makes sense. They also have a strange taste that I can't place, but I am used to "normal" store pickles.

I find it helps to add something containing tannins to my cucumber pickles to help them stay crunchy. I know a lot of folks use grape leaves for this purpose, but grapes donʻt grow where I live, so Iʻve taken to adding some green tea leaves - it works well for me!

As to the weird flavor, maybe buy a jar of live sour pickles to see if it's normal.
