Shelf life of fermented garlic?

Postby Moslavina on Sat Nov 28, 2020 10:44 am

Hi all.

Was wondering does fermented garlic after going through the one month ferment need to be refrigerated in order not to spoil?
I was thinking of doing a large batch and then transfering into smaller glass containers. My fridge is not large enough and the garage is too warm even during winter.

So my question is how long can they be good for with this way of storage?

I can only speak to "black Garlic" and it is going on 2 years of on the shelf with no refrigeration and has not spoiled and the taste seems unchanged as well. I did one quart and have really only used 1/10 in 2 years.

Garlic as in part of another veggie ferment has always been refrigerated so I cannot speak to non refrigerated.

I have kept brine-pickled garlic at kitchen-temp for years without it spoiling.
