I am new to fermentation and was wondering if Stevia can be added to a brine solution to add a little sweetness? If so, will it effect the forming of the good bacteria? I don't use sugar and don't want to do anything with a cooked brine. Any information would be appreciated.

I've never used Stevia, but I don't see why you would have to put it in during the fermentation. Why not add it afterward when you go to store the veggies in the fridge?

I just wanted to see what kind of added flavor Stevia would add while fermenting, but I don't want to do anything that would interfere with the good bacteria forming. I don't know if Stevia would do that. We add garlic, dill, etc to our brines and I didn't know whether Stevia is considered a spice or considered a sugar. This inquiring mind would like to know :) I absolutely could add it afterwards. Thanks for your thoughts. Have a great day.
