White fuzzy mold on previously healthy sourdough starter

Postby Kmsimone on Sun Sep 14, 2014 8:08 am

I have had a great sourdough starter going for 3 1/2 years. A couple of weeks ago it developed a fuzzy moldy/yeasty surface. I've been following the "just scrape it off & it will be fine" route, but it isn't back to its old character. It's much more like a poolish, bakes nice baguettes but is not the same starter. I had some reserved starter frozen in case of emergencies which I defrosted and fed as usual, after safely storing the infected one in the fridge. It was going fine for a few days, but this morning I was dismayed to see this one had gone moldy too! Smelled like sake, barely sour, and very fuzzy. The two starters were never in contact. Any ideas? Could my flour be the problem? Any information about causes and/or solutions would be appreciated!
