Dan Dou Chi - Fermented Soybeans

Hello!

I've looking for the "Dan Dou Chi" recipe with no success. This is a fermented soybean used in chinese medicine for medicinal soups. It's cooked with chinese onion in order to treat cold or flu. After scouring the internet LOL google variants. Pretty interesting at first blush. http://www.soyinfocenter.com/pdf/150/FBS.pdf Seems same inoculate as natto but varied process.
