Hello!

I've looking for the "Dan Dou Chi" recipe with no success. This is a fermented soybean used in chinese medicine for medicinal soups. It's cooked with chinese onion in order to treat cold or flu. Has anybody tried to do it? I found this video about the process, but it doesn't explain how it's exactly done https://www.youtube.com/watch?v=mORScC- ... uTWXDL5CUY

Claudia

Hi Claudia,

After scouring the internet LOL google variants. Pretty interesting at first blush. http://www.soyinfocenter.com/pdf/150/FBS.pdf Seems same inoculate as natto but varied process.

Enjoy reading with a nice glass of Kefir. :D

abbreviated version... https://www.ehow.com/how_8255978_fermen ... beans.html This says Koji inoculation.
