HI, I'm obviously new to fermenting with this question but wondering what would happen if I were to lactoferment ginger, i.e. using only salt and a whey starter and once it has begun fermenting to add sugar and blend it up for a healthier ginger beer? Would that destroy the beneficial bacteria? I have been doing the "ginger bug" method using only sugar (no salt) but doesnt seem like the healthiest way to go ...
