I made the sweet potato fly from the recipe in the book, but have used butternut squash instead, as I had one and I can never leave a recipe alone. Anyway, after 3 days nothing had happened, so I gave it one more, and now it's turned thick and jelly-like, and is bubbling away crazily! I strained it and put it in a demijohn with an airlock, and am trying to eat what didn't fit in there. (Very, very very good with greek yoghurt) but what will happen now? Will it be OK to eat for a while? Should I leave it and let it turn into wine? Will it keep getting thicker?
