Hi everyone,
I have been enjoying kombucha as a drink for a couple of years now and just recently started to experiment with making some fruit and herbal vinegars with my older batches of kombucha. Right now I have aged kombucha of two months which I have been using as vinegar. Now I am starting to further ferment that vinegar with rosehips and another batch with plums. I plan to let this ferment for a further 8 weeks but I am just wondering if anyone has experience with making flavoured or medicinal vinegar in this way.
Any thoughts?
