I just watched a video which claimed that water kefir only digests the fructose in sucrose leaving behind the glucose.
This seems unlikely to me. It's not like sucrose is a simple compound that the cells can pick and choose which part to digest. The whole disaccharide probably has to be ingested. I also kind of doubt the combination of yeast and bacteria are all so picky. One of them must like glucose.
Lastly, I've tasted the ferment and it doesn't taste like sugar.
Now I could be wrong, so I thought I would ask. Has anyone else heard of this?
