Water Kefir fruit

Hello, when I brew the 2nd ferment of water kefir, i get left over fruit I used for flavoring. Is it ok to eat this fermented fruit? I hear some just throw it out and i hate to waste.

Yes, you can eat the leftovers but don't overdo it.
You have a natural microbiota flora in a state of equilibrium, you don't want to introduce a species of microbe in a large number or it will affect the natural balance and lead to (probably) dysbiosis https://en.wikipedia.org/wiki/Dysbiosis

Or in the best case, diarrhea

I heard people also use them for composting so that is throwing them away with a purpose i guess :)

Fermented fruits = even more healty than normal fruits.

What disbiosis? Why?

But weird thing is, fruits that I ferment in normal water usually taste better to me than fruits that I ferment in tibi water as flavoring.
