Black strands growing in beet stem ferment

Postby mallhattan on Tue Jan 16, 2024 1:55 am

Hi all,
New fermenter here. I've attached a pic of some dark/black elongate blobs that grew in a ~2-week beet stem ferment I made (with garlic and ginger). The blobs grew most prominently on the outside of the glass I used to weight the veggies down under the liquid. I see the white Kahm yeast, but this dark stuff doesn't look like that of like mold either. Any ideas what this is? thank you!

I've never seen anything like that. Are you sure it's microbial product and not something that floated up out of your produce and then stuck there? Does it have an odor?

I'm not sure if it floated up, but it wasn't there the first week or so of fermenting. I threw it out anyway. I'll see if I can reproduce it and will update as needed
